Ingredients
Satay:
1 ½ pounds boneless skinless chicken breast or chicken thighs cubed into bite sized pieces
Marinade:
1 stalk Lemon grass
1/2 cup coconut milk
3 cloves garlic, minced
2 teaspoons of ginger, minced
1 tablespoon fish sauce
1 tablespoon red curry paste
3 tablespoons light brown sugar
1 tablespoon garlic
1 tablespoon onion
1 tablespoon coriander root
1 teaspoon ginger
1/2 teaspoon ground turmeric
1/2 teaspoon cumin
1 tablespoon cilantro chopped
Wooden bamboo skewers soaked in water for 30 minutes
4 tablespoons of All Plant Protein
Dip:
Cilantro for garnish if desired
Lime wedges
Peanut sauce with All Plant Protein
Procedure:
Mix everything and marinate overnight.
Grill to tender and serve with sauce.
